curried away

So, when my friend Leah gives me a recipe, I listen. She is my go-to girl for tried and true recipes, and this recipe did NOT disappoint! Last week was a week of cooking firsts for me. 1st time I’ve ever made caramel {burned it the first time, second time’s the charm apparently} and the first time I’ve ever made curry. And I loved it! It was so, so chinchy and yummy. I hope you enjoy it as much as we did!

Leah’s Coconut Chicken Curry
• 1 – 1.5 lbs cooked, shredded chicken. {You can do this however you want. You can poach it, go easy and buy a pre-cooked rotisserie chicken from your grocery store, or bake it. I bake mine. Just place chicken on olive-oiled baking sheet, drizzle top with olive oil and salt and pepper, and bake at 350 until cooked through. About 30ish minutes, depending on how thick it is}.
• 1 can coconut milk
• 1 can petite diced tomatoes
• 1 8oz can tomato sauce
• 1/2 sweet yellow onion, chopped
• 2 cloves minced garlic
• 3 TBS curry powder
• 1/2 – 1 tablespoon sugar
• salt to taste

Directions: In a large, deep pot, saute onions with 1 tsp salt, in olive oil until near translucent. Add garlic over top of onions so it doesn’t burn, and cook until onions are translucent. Add curry powder and shredded chicken, stir until incorporated, and cook for another minute-ish. Add coconut milk, tomatoes, and tomato sauce. Add sugar {I used about a tablespoon} and salt to taste. Voilà! I served mine with brown rice {3 cups [uncooked] rice was the perfect amount for all the curry} and fresh green beans.

Varriations: Think of this as curry for beginners. You can probably do whatever you want with this recipe. My friend Chrissy adds golden raisins and chopped apples. If you’re a vegetarian, this would probably work sans chicken with some potatoes and vegetables in place of it. Yum! I’m hungry just thinking about it. Thanks for the recipe, sweet Leah!

Kimberly Herbert - ok, so i made it and it rocked my world! my husband was pretty impressed. its not everyday i put this much effort into a meal (which wasnt too much, it really was easy for how complex the flavor was) i thought i was so prepared with making it and then i read the part where i need to add curry and i dont have it! so i ran to the store while the onions were browning. the main ingredient… but other than that it was easy and delish! i forwarded it on to my friends to try as well! i used a rotisserie chicken and a some lime juice cause i was thinking it was thai when it was obviously more Indian but it tasted good in it. Thanks for the awesome recipe! :)
